ETC… This coffee is from Cerro San Luis Micromill, a family farm and mill run by two siblings, Alexander and Magali Delgado, and their spouses in the West Valley of Costa Rica. After coffee is picked on their farm, it is taken directly to the family’s mill, where they can process the coffee in a variety of ways - from washed to honey to natural. As is common in specialty coffee, “honey color” at Cerro San Luis is decided by how much mucilage is left on the coffee while it is drying - white, yellow, red and black honey being the most common. In white honey process coffees, like this one, most of the mucilage is removed prior to drying resulting in lighter, brighter and more delicate flavor profiles.
