ETC… This coffee is produced by Oscar and Francisca Chacón, third-generation coffee producers who own and operate the Las Lajas micromill in Costa Rica. They are committed to quality and innovation and were some of the very first farmers in Costa Rica to produce Honey process, Natural process, and Anerobically Fermented specialty coffee. This particular microlot, cultivated on their Los Angeles farm, utilizes the Chacón’s very own “Alma Negra” drying process developed at Las Lajas. Alma Negra is a specific and multi-staged Natural drying process where coffee is first dried inside of a greenhouse for 2-3 days while being continuously rotated. After this initial stage is complete, the coffee is then transferred to outdoor raised beds during the day to dry in the sun and piled in the greenhouse at night to slow down the curing process. This unique drying process results in a truly distinct and refined cup.
