ETC…  Peru is a bit of an underdog in the specialty coffee world yet it has the conditions necessary to produce world-class coffee. Cajamarca, in particular, is a temperate and tropical region in the northeastern highlands with very fertile soil at high Andean mountain elevations. This outstanding microlot is grown by Apolinar Arevalo, a founding member of Lima Coffees, whose farm is one of the highest in the region, at 2000 masl.
